Kitchen and restaurant sales fraud schemes can happen in several ways which include the following::
- kitchen staff bringing their own food, cook in the hotel kitchen and condiments for selling to guest or cutting significant portions out of the hotel foods for sell to guests, Cash made from the sales are concealed and diverted for personal gains.
- concealing cooked hotel food for personal use or takeaway
- given hotel food to relations, friends and others free or in exchange of other things for personal gains.
- customer Loyalty fraud schemes happens in two ways: =depriving loyal customers loyalty points by charging loyal customers for the kitchen services and then concealing the money collected, selling customer loyalty points earned to other guests and then concealing the cash,
- Offering of free food to guests or serving excessive quantities in order to receive higher tips
(1c) Hotel Bar fraud and abuse
Below are some of the common fraud schemes that happen in the hotel bars:
- Bring your own drink scheme –happens when to bar attendants sell the hotel drinks to guests, steal the money and then replace the empty bottles with fake drinks they brought into the bar.
- Drink Larceny happens when the bar attendant takes bottle(s) of drink(s) away or pouring the liquid content into water bottle for take away for personal use.
- Offering free drinks to guests in returns for higher tips,
- Offering free drinks to family members or friends for personal gains,
- Offering drinks to guests as trade by barter in exchange of goods for personal use,
- Customer Loyalty fraud schemes happens in two ways: =depriving loyal customers loyalty points by charging loyal customers for the bar services and then concealing the money collected, Selling customer loyalty points earned to other guests and then concealing the cash
